Melon, cucumber and mint salad with a white ginger beer

A white ginger beer has refreshing and spicy notes, making it an ideal companion for light, fresh and a little spicy dishes. Taking into account the season (September), I offer you a melon and cucumber salad with chili and mint . This salad is both sweet and tangy, which should pair perfectly with the ginger in your wheat beer.
Shopping list :
- 1 cantaloupe melon (or another seasonal melon)
- 1 large cucumber
- 1 fresh red chili pepper (adjust according to desired heat level)
- A handful of fresh mint leaves
- Juice of 1 lime
- Zest of 1 lime
- 1 tablespoon of olive oil
- Salt and pepper
- A pinch of sugar (optional)
Instructions :

Preparation of ingredients : Cut the melon in half, remove the seeds and using a melon spoon (or simply a knife), make balls or cubes of melon. Peel the cucumber and cut it into thin slices or dice. Finely slice the chili pepper, removing the seeds to reduce the heat (or keep them if you prefer more heat).

Assemble the salad : In a large bowl, combine the melon, cucumber and chili. Finely chop the mint leaves and add them to the bowl.

Dressing : In a small bowl, combine lime juice, zest, olive oil, salt, pepper and a pinch of sugar if desired. Pour this vinaigrette over the salad and toss gently to coat all the ingredients.

Serving : Serve the salad immediately in individual bowls or a large serving platter. It is best when eaten fresh.
