Trout fillet, roasted fennel and orange - Magic Hop (IPA)

For an IPA, particularly with its pronounced hoppy notes and citrus nuances, we offer a Trout Fillet on a Bed of Roasted Fennel and Orange , accompanied by an orange and basil vinaigrette. This recipe, using seasonal products from February in Switzerland, offers a balance between the richness of the fish and the freshness of the citrus fruits, echoing the characteristics of the beer.

Ingredients for 2 people:

For the trout fillet:

  • 2 trout fillets, with skin
  • Olive oil
  • Salt and pepper

For the roasted fennel:

  • 1 large fennel bulb, cut into quarters
  • 2 oranges, one cut into slices and the other for juice
  • Olive oil
  • Salt and pepper

For the vinaigrette:

  • Juice of 1 orange
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of Dijon mustard
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper

Instructions :

  1. Preparation of Roasted Fennel :

    • Preheat the oven to 200°C.
    • In a baking dish, mix the fennel with the orange slices, a drizzle of olive oil, salt and pepper.
    • Roast in the oven for 20-25 minutes, until the fennel is soft and lightly caramelized.
  2. Cooking Trout :

    • While the fennel roasts, season the trout fillets with salt and pepper.
    • Heat a frying pan with a drizzle of olive oil over medium-high heat.
    • Place the trout fillets skin side down in the pan. Cook for 3-4 minutes, then carefully turn and finish cooking for 1-2 minutes. The fish should be just cooked through.
  3. Preparation of the Vinaigrette :

    • In a small bowl, whisk together orange juice, olive oil, Dijon mustard, chopped basil, salt and pepper.
  4. Service :

    • On plates, arrange a bed of roasted fennel and orange slices.
    • Place a fillet of trout on each bed of fennel.
    • Drizzle with orange and basil vinaigrette.

This combination of savory trout, roasted fennel and tangy vinaigrette highlights the complex flavors of an IPA, providing a rich and harmonious dining experience.
