Spicy Lamb Curry

For the Brignoli Brewery IPA we offer a Spicy Lamb Curry with Basmati Rice . The rich spices and robustness of the lamb provide a nice balance to the bitterness of the beer, while complementing its hoppy notes.

Ingredients for 2 people:

  • 400g lamb shoulder, cut into cubes
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 piece of fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon of cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder (optional)
  • 400ml coconut milk
  • 2 tablespoons of vegetable oil
  • Salt and pepper
  • Basmati rice, cooked according to package directions
  • Fresh coriander to garnish

Instructions :

  1. Preparation of the Lamb :

    • In a large skillet or wok, heat the oil over medium-high heat.
    • Add the lamb and brown it on all sides. Reserve.
  2. Preparation of the Curry :

    • In the same pan, add the onion, garlic and ginger. Sauté until the onion is translucent.
    • Add the spices (curry, cumin, coriander, and chili) and cook for a minute until fragrant.
  3. Cooking the Lamb :

    • Return the lamb to the pan with the spices.
    • Add the coconut milk, salt and pepper, and bring to the boil.
    • Reduce heat and simmer gently until lamb is tender, about 1 hour.
  4. Service :

    • Serve the lamb curry hot, accompanied by Basmati rice.
    • Garnish with chopped fresh cilantro.
