Lemon Risotto - Lemon Blanche (Brasserie du Singe)

For a white beer with Sicilian lemon, we offer a Lemon and Shrimp Risotto . This comforting dish, with its winter flavors and touch of lemony freshness, perfectly complements the tangy notes of the beer.

Ingredients for 2 people:

  • 200g peeled shrimp
  • 150g Arborio rice
  • Zest and juice of 1 Sicilian lemon
  • 1 shallot, finely chopped
  • 1 clove of garlic, minced
  • 750ml vegetable or fish stock, hot
  • 100ml of white wine
  • 50g grated parmesan
  • 2 tablespoons of olive oil
  • Salt and pepper
  • A few sprigs of parsley for garnish

Instructions :

  1. Preparation of Shrimp :

    • In a pan, heat a tablespoon of olive oil.
    • Add the shrimp, salt and pepper, and quickly sauté until pink. Reserve.
  2. Cooking the Risotto :

    • In the same pan, add a tablespoon of olive oil and sauté the shallot and garlic until translucent.
    • Add the Arborio rice and stir for a minute to coat the grains with oil.
    • Pour in the white wine and let it evaporate.
    • Gradually add the hot stock, one ladleful at a time, stirring constantly until the liquid is absorbed before adding the next one.
  3. Finalizing the Risotto :

    • When the rice is almost cooked, stir in the shrimp, lemon zest and juice, and Parmesan.
    • Season with salt and pepper, and continue to cook until the rice is tender but still slightly firm in the center.
  4. Service :

    • Serve the risotto hot, garnished with chopped fresh parsley.

The mixture of shrimp, with the fresh aroma of lemon and the creamy texture of the risotto, pairs wonderfully with the refreshing characteristics of the Sicilian lemon white beer.
