Homemade Pretzel & Obatzda - Lager (Brasserie BLZ)

To accompany a Bavarian Lager, renowned for its delicate balance between malty sweetness and subtle bitterness, we offer Homemade Bavarian Pretzels with an easy-to-make Obatzda . This classic combination highlights the beer's traditional characteristics while providing a contrast of textures and flavors.

Ingredients for 2 people:

For the pretzels:

  • 250g of flour
  • 1 teaspoon active dry yeast
  • 1 tablespoon of sugar
  • 150ml lukewarm water
  • 1 teaspoon of salt
  • 30g unsalted butter, melted
  • Coarse salt for sprinkling
  • 3 liters of water
  • 50g baking soda

For the cheese sauce:

  • 200g Camembert, at room temperature
  • 100g of fresh cheese
  • 50g butter, at room temperature
  • 2 tablespoons of Bavarian beer (a Lager, for example)
  • 1 small shallot, finely chopped
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper
  • Chopped chives, for garnish

Instructions :

  1. Preparation of Pretzels :

    • In a large bowl, mix the flour, yeast, sugar, and salt.
    • Add the lukewarm water and melted butter, and knead until you have a smooth dough.
    • Let the dough rise in a warm place for about 1 hour or until doubled in size.
    • Preheat the oven to 200°C.
    • Divide the dough into ropes and form pretzels.
    • Boil the water with the baking soda. Dip each pretzel for 30 seconds, then drain.
    • Place the pretzels on a baking sheet, sprinkle with coarse salt and bake for 15-20 minutes until golden brown.
  2. Preparation of Obatzda :

    Preparation of the Cheese :

        • Mash the Camembert, cream cheese (Philadelphia) and butter in a large bowl until you obtain a creamy and homogeneous consistency.
        • You can use a fork or an electric mixer to make this process easier.

    Adding Flavors :

        • Add the chopped shallot, beer, paprika, cumin, salt and pepper to the cheese mixture. Mix everything well.

    Rest :

      • Cover the bowl and let the Obatzda rest in the refrigerator for at least an hour. This will allow the flavors to blend well.
    • Service :

      • Serve the pretzels warm and dip in the obatzda.

    Combining warm, crispy pretzels with Obatzda is a classic and delicious way to enjoy the flavors of a Bavarian Lager.
