Gratin Dauphinois with Porcini mushrooms - Brasserie Septentrion (Smoked blonde)

To accompany a lightly smoky blonde, offering subtle notes of smoke without overshadowing the freshness and lightness of the beer, I suggest a Gratin Dauphinois with Porcini . This rich and creamy dish, with an earthy touch brought by the porcini mushrooms, goes perfectly with the complexity of a smoky blonde, highlighting its aromas without dominating them.

Ingredients for 2 people:

  • 500g potatoes, peeled and thinly sliced
  • 200g fresh or rehydrated porcini mushrooms
  • 2 cloves of garlic, minced
  • 250ml liquid cream
  • 100ml of milk
  • Salt and pepper
  • A pinch of nutmeg
  • 100g grated cheese (comté or gruyere)
  • Butter for the dish

Instructions :

  1. Preparation of porcini mushrooms :

    • If using dried porcini mushrooms, rehydrate them in warm water for about 30 minutes, then drain them.
    • Clean the fresh or rehydrated porcini mushrooms and cut them into thin slices.
  2. Assembling the Gratin :

    • Preheat your oven to 180°C.
    • Rub a gratin dish with garlic and lightly butter it.
    • Place a layer of potatoes at the bottom of the dish, add salt and pepper.
    • Add a layer of porcini mushrooms on top of the potatoes.
    • Repeat the layers until you run out of ingredients, finishing with a layer of potatoes.
  3. Cooking :

    • In a saucepan, heat the cream and milk with the remaining minced garlic, salt, pepper and a pinch of nutmeg.
    • Pour this mixture over the potatoes and porcini mushrooms in the dish.
    • Sprinkle the top of the gratin with the grated cheese.
    • Cover the dish with aluminum foil and bake for about 1 hour.
    • Remove the foil and continue baking until the top is golden and crisp, about 15-20 more minutes.
  4. Service :

    • Let the gratin rest for a few minutes before serving.
