Citrus sea bass ceviche - Brasserie Fennek (Blanche)

To accompany a white beer, which is light, refreshing and can have notes of citrus and spices, I suggest a Citrus Sea Bass Ceviche . This light and tangy recipe echoes the refreshing qualities of white beer, highlighting the freshness of the ingredients and complementing the citrus notes of the beer.

Ingredients for 2 people:

  • 300g sea bass fillet (or another firm white fish), fresh and sashimi quality, cut into small cubes
  • Juice of 2 limes
  • Juice of 1 orange
  • 1 small red onion, thinly sliced
  • 1 avocado, diced
  • 1 small red pepper, seeded and finely chopped (optional)
  • A few coriander leaves, chopped
  • Salt and freshly ground black pepper

Instructions :

  1. Fish Marinade :

    • In a glass or ceramic bowl, combine the diced fish with the lime juice, orange juice, salt and pepper. Make sure the fish is well submerged in the juice.
    • Cover and leave to marinate in the refrigerator for about 1 to 2 hours, until the diced fish become opaque and are "cooked" by the acidity of the citrus fruits.
  2. Addition of Other Ingredients :

    • Once the fish is marinated, drain lightly and add the red onion, avocado, red pepper (if using), and cilantro. Mix gently to combine.
  3. Service :

    • Taste and adjust seasoning with additional salt and pepper if necessary.
    • Serve immediately, accompanied by tortilla chips or tostadas for a light meal or starter.
