Chicken Satay Skewer - Session IPA (Twenty Six Brewery)

For an IPA Session in winter, we offer Chicken Satay Skewers with Peanut Sauce . The combination of warm spices and rich peanut sauce complements the beer's hoppy lightness and fruity notes.

Ingredients for 2 people:

For the chicken skewers:

  • 300g chicken breast, cut into cubes
  • 2 tablespoons of soy sauce
  • 1 tablespoon of honey
  • 1 teaspoon of turmeric
  • 1 teaspoon of cumin
  • 1 clove of garlic, minced
  • Juice of 1/2 lemon

For the peanut sauce:

  • 100g creamy peanut butter
  • 100ml coconut milk
  • 1 tablespoon of soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon red curry paste (adjust to taste)
  • Juice of 1/2 lemon

To serve :

  • Steamed rice
  • Fresh coriander
  • Lemon wedges

Instructions :

  1. Chicken Marinade :

    • In a bowl, mix soy sauce, honey, turmeric, cumin, minced garlic and lemon juice.
    • Add the chicken cubes and leave to marinate for at least 30 minutes.
  2. Preparation of the Skewers :

    • Thread the chicken cubes onto skewers (if using wooden skewers, soak them in water first).
    • Grill the skewers until cooked through and golden brown, about 3-4 minutes per side.
  3. Preparation of the Peanut Sauce :

    • In a saucepan, combine peanut butter, coconut milk, soy sauce, brown sugar and red curry paste.
    • Heat over low heat, stirring until you obtain a smooth sauce. Add the lemon juice and remove from the heat.
  4. Service :

    • Serve the chicken satay skewers with steamed rice.
    • Drizzle with peanut sauce and garnish with fresh cilantro and lemon wedges.

The spices and peanut sauce provide heat and depth, which pairs perfectly with the light, hoppy characteristics of a Session IPA.
